see my kimchi has already been in the fridge for 5 days (with me occasionally eating it, it tasted ok) and i remembered i had a box of flour lying somewhere.
so earlier this evening, for the first time, i created 김치전 using all the left kimchi and flour. i finished them all. ㅋㅋ

lol i remember 'trying' make kimchi with my aunt...so tiring. XP i miss homemade kimchi, tastes better than store bought. i have to wait until i go back to korea next year though :P too much traveling. XD

If you don't like to use oysters, skip it. I like the flavor of oysters. Kimchi never goes bad and it will be fermented.

I wouldn't use more sugar for this amount of kimchi. It's enough. If your kimchi is too salty and spicy, wait until it's fermented.

sorry, I have never made kimchi with bok choy.
Why don't you try out my kimchi recipe with bok choy. I sometimes use bok choy to make fresh salads with Korean seasoning.
